This recipe is quite flavorful and super easy! My mom used to make it alot when I was in high school so I kinda got tired of eating haha, but it's really good and also healthy! I have taking a liking to it again and eating it with some extra toppings makes it even better! Serves 4, but you can easily double the recipe if needed to serve more :)
Here is how you make it:
3 cups of chicken broth
1 cup uncooked lentils, washed
1/2 cup uncooked brown rice
1 tsp. basil
1/4 tsp. garlic powder
1 small onion, chopped
(seems I'm trying to grow onions as well)
Combined all ingredients together in a casserole dish.
Bake covered at 300 degrees F (150 degrees C). About 2 hours or until tender and water is absorbed. You can bake 50 degree higher if you need it done faster.
To serve: top casserole with about 3/4 cup cheddar cheese, grated. You may need to return it to the oven for the cheese to melt completely.

It is also great with guacamole, shredded lettuce, or just chopped tomatoes. Whatever you like! Get creative and let me know how you enjoy having it!
